How do I change the outline thickness of a letter/word when the font effect
has been changed to 'Outline'?  For example - (the text size is large 100+) i
have typed a word, and simply changed the font to 'outline'. Is there a way
to change the thickness of the outline? Thanks.

There is no way to change anything about the Outline property applied to a
font. If you create WordArt, you can adjust the weight (and color) of the
"line" (outline) and the color of the fill, plus the color of any shadow,
etc.
