How do I keep track changes on in a document but hide who made the changes
and when they were made?

If you're working in 2003, go to Tools, Options, Security, and select Remove
personal information from file properties on save.  Then, save the document.
All changes will still be tracked, but all will be attributed to "Author" and
will have the same revision date (the current date).
