How do I change to Canadian spelling?

I am driving myself crazy trying to change the default spelling to Canadian
from American English. I HAVE to do this, and I have to switch back and
forth, and also to French, as I edit for a living. It was SOOOOOO much easier
in previous versions of Word but this one is too fancy for me.

HELP!

The way proofing language is applied to text hasn't changed. The dialogs are
exactly the same as they were in earlier versions. The language button
(equivalent to tools > language > set language)  is on the review toolbar.
Or you can click the language indicator on the status bar.
