Things to check:
Table > Table Properties > Table tab > Text Wrapping must be set to None.
The table must have no page breaks (which will actually split the table into
more tables).
Make sure that you have only the first row(s) and not the entire table set
as heading rows.
The heading row(s) must be the first row(s) in the table.

I have spent ages on trying to solve the same problem in Office 2007
turning off the text wrapping solved it.

This is a very common problem if you work on tables in Print Layout view.
The slightest nudge of the table handle will cause the table to become
wrapped.

I have weird behaviour in some tables using Word 2007. The header repeats on
some pages and not on others. It doesn't seem to make any difference what the
settings are. Text wrapping, allow to break, even the repeat header rows
setting! Also the table style properties settings don't seem to make any
difference. I'm really getting frustrated with this behaviour. Are any of you
aware of bugs in word 2007 in this area or have I missed something out? I
have never had these problems in earlier versions of word.
