Is there a way to determine the creation date of a document?

Go to File-Properties and you will find the creation date. If the document
is not open, right-click on its icon and you can also access Properties.

Do note that this date will not stand up to legal scrutiny as such dates can
be edited. Ultimately there is no way to determine when a document was
created from its content, displayed or hidden.
