Hi Gary,
From the Tools menu, select AutoCorrect Options and then go to the
autocorrect tab and locate the (c) item in the list box and then select it
and click on the Delete button.

In addition to Doug Robbins advice, if you want you can just press Ctrl-Z
(UnDo) right after the conversion to the copyright symbol.
