Default setting for inserting pictures in MS Word

In previous version of Word it was possible to change the default so that
pictures could be inserted from file with 'square' text wrapping rather than
'in line with text'. Can this be undertaken in Word 2007?

Yes. Office Button | Word Options | Advanced: Cut, copy, and paste:
Insert/paste pictures as...
