Can anyone  help me here? I type in need to be able to type in both
English and French (with its declensions etc) on the same PC but I
don't want to use the Symbol drop down box. Anyone in this group
solved a similiar problem?

Install French language support from the Control Panel. Then
by switching between keyboards (left alt+left shift) you can
type in whichever language you want to your heart's content.
(If you're a touch typist.)

Mmmm. Have you ever seen a French keyboard? Things are truly
backwards for those accustomed to an English (or even German)
keyboard.

I'd be more inclined to use Word's internal keyboard shortcuts
for the special characters, such as these from Word's Help

CTRL+` (ACCENT GRAVE), the letter
à, è, ì, ò, ù,
À, È, Ì, Ò, Ù
CTRL+' (APOSTROPHE), the letter
á, é, í, ó, ú, ý
Á, É, Í, Ó, Ú, Ý
CTRL+SHIFT+^ (CARET), the letter
â, ê, î, ô, û
Â, Ê, Î, Ô, Û

While I sometimes find myself doing that with both French
and Turkish, the problem with that method is that Word
doesn't catch the change in language unless you switch
keyboards, so you run into problems with proofing
(spell-checking).

Ah. Well, I never let Word decide which language I'm typing
- it guesses incorrectly too often. I always explicitly tell
Word which language I'm using...

OTOH, I have noticed I can assign more than one language to
any particular keyboard, and Windows will switch languages
within the same keyboard (and thus the language in Word) if
I'm not careful.

How can more than one language be assigned to a keyboard? And how will
Windows switch the language and this affect Word? Thank you.

When you add a keyboard through Regional Options, you choose both a language
and a keyboard to go under it. You can add the same keyboard two different
times under two different languages in this way.
