I've created a form in word. I want it to only be one page
long and in the text fields I don't want the field
to "grow" or change length when text is entered. Is that
possible?

Use a table with fixed cell dimensions

Doug Robbins already answered your immediate question. For more about online
forms, follow the links at <URL:

Chapman's series of articles.

Hope this helps,
