How do you insert page numbers that will show the current page number
followed by the total number of pages, such as Page 23 of 125?

For the page number part, use:
Insert >> Field >> Numbering >> Page

For the total part, use:
Insert >> Field >> Document information >> NumPages

Or use the Page X of Y entry from the AutoText menu on the Header and Footer
toolbar.
