I can't quite get my head around the interaction of styles and themes. What
I want to do is modify a style, such as Heading 1, and then save that as
part of a theme. Then, when I change to that theme I get my modified style
back. What I want is to use the theme like a (CSS) style sheet but can
styles only be saved in the document or attached template?

Hi David,

What version of Word are you using?  There are different definitions of 'themes' capability depending on version.
