Do you know if there is a shortcut key for inserting
bullets (the wing ding kind)?

If you want to make a bulleted list, you can use Ctrl+Shift+L, which applies
the List Bullet style. If you want to insert a bullet at any other point in
a document, you can assign a shortcut key to any character in the Insert |
Symbol dialog; just select the character and click the Shortcut Key...
button.
