turning Word document to PDF format

I'm sure this can be done - I just can't figure out how.
I know other programs, such as Starword have a simple PDF
icon on the toolbar to turn docs into PDF. Any such thing
on Word from Office 2000?

Not unless you have Acrobat or one of its less-expensive clones, no.

This is what I suggest:

1. Print to "Acrobat Distiller" (free) and generate a .PS
postscript file
2. Ghostscript (free) to convert the .PS into .PDF.

Drawback: this method does not maintain hyperlinks, but if
this is what you really need, buy a Full Acrobat.

This is what I use:

1. Same as above
2. Same as above
3. A helper program called WordToPDF
(http://www.topdf.de/InfoGB.htm) which allows me to
convert all Office documents (.DOC, .PPT, .XLS, etc.)
into .PDF easily.

Simple-

But you need install Adobe Acrobat to do it.

The current verision is 6.0, Standard or Professional.  
You probably only need Standard. Go to
http://www.adobe.com/products/acrobatstd/overview.html
for more info.
