When in a document and I go back and format a title
(let's say)  I ask it to bold just the title of the
paragraph and it makes everything bold.  I am an advanced
Microsoft Word user and have tried everything.

Amy,

There is at least one thing that you have not tried.  See:
http://www.mvps.org/word/FAQs/Formatting/WholeDocumentRefor
matted.htm

The link is broken by text wrapping so be sure to put
entire link in your browser
