Using the Mailings ribbon under Labels, I click Options and select
Avery US Letter. Then, I select Label # 5160 (although all seem to be
affected), click OK and click New Document. The labels don't fit on
the page and continue on to the 2nd page (the last row). Any ideas?
I can play with the margins, however, that defeats the whole point of
a pre-defined label! Your help is appreciated.

Do you have a header in the Normal.dot template that is forcing the labels
down the page? Possibly you will need to select the Page Setup item from
the Page Layout tab and on the Layout tab of the Page Setup dialog, set the
Header and Footer distances from the Edge to 0"
