How are you doing the "simply send the document to an E-mail recipient"
Here Word 2007 only has the ability to "Send a copy of the document in an
email as an attachment."

Actually... it works fine on my other PC. In Word 2007 there is a "Send to
Mail Recipient" button available. That's different from the "Email" button
that sends the doc as an attachment. I want to use the "Send to Mail
Recipient" button with Outlook.

I resolved the issue by repairing office 2007.
