While you can use an address book to mail merge is there anyway the
reverse can be done. That is, select a whole lot of letters and export
the address's to my address book. Problem arose when I lost my address
book built up over many years and want to use my letters to rebuild the
address book.

I'm just curious?

Is there a way of saving the address into plain text format, ie. a tab
separated list and back into an address book.

Seems sensible, there are people whose interested in managing their
mailing list by hand and use other EMail clients.  You can use the plain
text file as a backup and don't need to rely on MicroSoft software to not
loose your address book.

You could use the Export/Import faciltiy in Outlook or a catalog or
directory type mailmerge in Word
