Hi:
I am not sure if this is true for the above question or just I don't know
how to configure it.
When I use Word 2003 mail merger for email messages, I found that it seems
can be delivered by the default email account set at Outlook 2003, and I
have no way to choose which email account, as I am writing a new email
message with Outlook 2003, to deliver the message.
As consequence, I have either to change the default email account before
doing the mail merger, or set a separate profile with the only email account
as the default one to be used when doing mail merger. I now use the second
method but wondering if this is the best way to do it or if it's possible to
select a different email account during mail merger process.

There is no way to change it during the mailmerge process.

Thanks for the confirmation.
So I guess my procedures are right and that is either to change the default
email account before doing the mail merge or log onto another profile using
another account.

From Tools-> E-mail accounts -> View or Change ... you change change the
order in which e-mail accounts are processed. Just move the account you
want to send from to the top of the list before you do the merge. Then,
you can move it down later if you want. This works pretty well.
