How do you change caps on automatically inserted fields "And"

When creating a mail merge letter in Microsoft Word 2003, the document is
automatically inserting "And" but I can't make it not capitalized.  I have
edited the mergefields for my two fields that need Title Caps and that is
fine, but I can't get "And" to stay lowercase.  It is inserted automatically
and won't take a "&" instead either.

I imagine that the And is in the data source separating the two names.  If
that is the case, the only thing that you are going to be able to do is
execute the merge to a new document and then use Find and Replace to replace
And with and.
