Can I ask If...Then...Else to insert the word Dear before any preferred
salutation that starts with 'M'?

Try

{ IF "{ MERGEFIELD myfield \*Upper }" = "M*" "Dear " "" }{ MERGEFIELD
myfield }

(You can use various types of field instead of { MERGEFIELD myfield }
depending on what you need). All the {} need to be the special field code
braces that you can insert using ctrl-F9.
