Word has to work over a converter to merge to Outlook data.
The converter doesn't bring across all the Outlook fields.
Better is to use the Tools/Mail merge function in Outlook.
Read the options available in that dialog box very
carefully, as it gives you much more flexibility than
you're accustomed to with Word!

I WAS using the Outlook way of MailMerge.
As it turns out, your custom fields have to be created in
the folder (then they can be visible in your views an
thereby possible to merge)
