Yes, Word will always use your default email account's
"From" setting. You'd need to change that.
Or, you'd need a VBA (macro) solution to process the emails.

Ok, so how do I create another email account which I can then set as the default to use for the mailings?
Today we use the "from" field to send from an alias name, and the mail is returned to a public folder so anyone in our team can see it. This is an SMTP email account. It is not it's own mailbox on Exchange.
If I try to create a new account, it doesn't recognize this name as a user in Exchange

You need to ask this in an Outlook (or Exchange) newsgroup. Most of the "regulars" here are Word-, not
Email-oriented in their expertise :-)
