I need to be able to use  maile merge on a daily basis.  Is there any way I can set up standard letters and then create fields for various persons and when needed merge one persons details into that standard letter.  Help please!!!

A mail merge may not be the best plan here. Where are you storing the data?
Are you just sending pro-forma letters to individuals that you wish to enter
into a few fields?

If the letter doesn't change, an on-line form is probably the best bet. See

If you are grabbing the data from some sort of database eg Outlook then you
can use a standard form letter merge.
