How do you FLAG an email with a due date/time that was
generated from a mail merge from word?

I'm not sure what you mean exactly, but you will probably have to:
a. stop your e-mail from transmitting mails before you start the merge
b. do the merge
c. open the e-mail(s) in the outbox and fix them. If you are using Outlook
or something else that allows some form of automation, you might be able to
do this using a VBA (or whatever) macro
d. allow the e-mail client to start transmitting again.

I suspect the only alternative to that would be to generate your e-mails
programmatically (not using mailmerge) using e.g. Word VBA and the Outlook
object model or CDO interface.
