This would certainly require VBA coding, and may not even be
possible at all if you use Word's "data form" interface to
enter the data. Which version of Word is involved?
Are you at all familiar with Excel or Access?

Another thought - This will work when entering data into the source table or csv file, but also won't work in Word's "data form" interface. You can set up a simple macro to insert a static date when you type a shortcut keystroke combination (for example CTRL+;)
