There's no way to do it in Word. The only way you could possibly do it would
be to have multiple e-mail profiles and
a. ensure that you are logged out of MAPI before you start Word
b. when you start the merge, you should be prompted for a profile - choose
the one with the sender address that you want
However, I am not even sure that that works or would not cause additional
problems.

I just did a test of this. I set up a second profile
using my Hotmail account (my first profile is an Exchange
Server account). I then sent a mail merge to my hotmail
and Exchange Server accounts. It worked great - I got the
mail merge from the hotmail account. Just don't forget to
change your profile back when you're done!
