Selecting a completely different label layout will probably wipe out
everything. But if all you need to do is adjust the layout a bit, the layout
is basically just a Word table whose properties you can modify using the
Table menu.

I know I can change the table. What if I want to add or
delete a merge field?

Working in the merge source document edit the *second* label layout on the
page until it provides the appearance you want. Copy to the clipboard.
Select all the cells in the table and paste - this will paste the clipboard
content to each cell. Remove the {Next} field from the *first* label on the
page and merge again.
