Well it SHOULD be as easy as escaping the " with the \ but this is broken on
recent versions of word.
The answer appears to be using {SYMBOL 34} although you may need to surround
it with a {QUOTE ...} field depending on your version of word.

Thank you for your help. It helped me find another
alternative to the double apostrophes. I'm using Word
2002, so { Symbol 147 } and { Symbol 148 } seem to be the
way to do it.
