Can I mail merge from different worksheets in an excel workbook into a single
word document?  So, the merged documents would have merge fields coming from
different worksheets in the workbook.

No. word can only link to a single data table to use as a data source. You
should consider linking all these various ranges into a single sheet for the
purposes of mail merge.
