Email is not an option under "select document type" in word

How do I get the "select document type" fields in Word
2003 to include E-mail?

As far as I can tell, the only difference in the mailmerge main document
that is created when you select the Email messages type of mailmerge main
document is that it switches to web layout view.

The real email functionality does not come into play until you select the
destination to which you want to execute the merge.
