I want to get a name and fax number from my Outlook Contacts into my Word
document without having to cut and paste.  It would be really nice if I could
create a fax cover letter directly from Outlook...

You can do that - see the technique used at
http://www.gmayor.com/Macrobutton.htm and adapt the macro to insert the
fields you want.
or
Run a mailmerge starting in Outlook
http://www.gmayor.com/mailmerge_from_outlook.htm into a pre-prepared fax
template containing the relevant fields.
