Is it possible to declare variables and set them equal to the value of merge
fields during a mail merge?

Document variables can only be created by the use of Visual Basic.  However,
using Visual Basic, it is certainly possible to create variables for each
document produced by a mailmerge.  The mailmerge process itself however
cannot do it.

Better if you tell us exactly what the purpose of the variables will be so
that we can suggest what's best.
