How do I select an outgoing e-mail address for Mail Merge?

I have several different e-mail accounts that I use to send and receive work
mail through Outlook. When using Mail Merge to create e-mail messages, is
there a way to specify which e-mail address is displayed in the "From" field
on the e-mails?

Temporarily change the default account in Outlook.
