Date funtion

I have many mailmerge letters set up to automatically enter today's date when
they are merged with data from Access.  However, I would really like the date
printed to be the next day to allow for signing of the letters and then
posting/mailing them on the following day.

Is there a way to adjust the date function to display today's date plus one?

Yes, it is possible. But, it is more complex than you might imagine. See
http://addbalance.com/word/datefields2.htm for information on the different
kinds of ways to make a date calculation work. It includes links to pages
with fields and an explanation of different macros that can be used instead
of fields.
