How can I create custom merge fields?

I am trying to create some custom merge fields in a Word 2003 document, but
have not been able to find a way. Can you help?

Instead of using the default merge field titles that are available, I would
like to create my own, based upon the particulars of my business.

You can name your mergefields as you please as long as they conform to the
naming conventions.
