how can I define a custom merge field?

I am trying to define a custom merge field that I want to be populated by
each addressee's information in a mail merge database. Any ideas?

What do you mean by a "custom merge field"?  If it is merely one that is not
included in the AddressBlock, simply do not use the AddressBlock.  Just
insert the merge fields that YOU want to use in the configuration that YOU
want them.
