I don't understand what what each of the Insert Word Field
options do. Where can I find an explantion of each?

Best way to go about this would probably be:
1) Insert each of these (one to a line so you can keep track)
2) Press Alt+F9 to see the field codes, so that you can see
the names
3) Search Word's Help on the field name (for the IF field,
for example, search: If field)

Word's Help is actually pretty good for the field codes, in
contrast to many other features.
