It doesn't appear that I can insert my AutoText entries
in protected form fields. Is there a work-around for this
or another way I can use my AutoText entries?

It works for me (Word 2003). I have a "jurat" used in affidavits that
consists of a table with text. It's entry name is pl_jurat. When I type it
the tooltip pops up and pressing Enter brings it into the formfield.
Otherwise, you can type the entry name and press the F3 key, I believe.

See the MVP FAQ: <URL: http://www.mvps.org/word/> which is awesome!
