Some people at work have been complaining about their
autotexts and other customizations being gone in Word
2000.  Is there a reason why these autotexts would just
disappear?

One common reason is that a user has created a copy of Normal.dot and saved
it over Normal.dot. See  "WD2002: Styles and AutoText Are Not Copied to New
Template Based on Normal.dot" at http://support.microsoft.com/?kbid=291441.
The correct way to edit Normal.dot is described at
http://www.mvps.org/word/FAQs/Customization/CustomizeNormalTemplate.htm.

Another possibility is that the "Look in" setting in the AutoText dialog has
been changed from "All active templates" to a specific template.
