I created a form and put a drop down menu in it.  I have
5 choices to pick from.  How can I make the 5 choices
(font) a different color?

you can't. At least, not without the help of a macro that
would
   - check the entry and decide the color
   - unprotect the document
   - apply the color formatting
   - reprotect the document
