There are several toolbar buttons which I have added to
my toolbar, some of which are built-in commands and some
of which run macros. No longer using some of these
buttons, I have tried to remove them by choosing
tools/customize and dragging them off the toolbar or
selecting them, right-clicking, and choosing "delete".
The buttons appear to be gone but when I close customize
shazam they're back. When I click on "Add or remove
buttons", the buttons that I have added to the toolbar
and their checkmarks are greyed out so that I can't clear
the checkmark, which is presumably why I can't remove the
buttons. Does anyone know how to correct this?

It sounds as though they are contained in a template that you are not saving
when you close Word. Thus they are still present to be reloaded.
