I'm not sure I understand the question, completely.
See if the following steps are in the direction you want to go:
1. The "Home" tab, Font group: there's a little square button at the bottom
right. Clicking it should open the Font dialog box.
2. Select the font and font size you want to use.
3. Click the "Default" button and confirm you want this to be the default
for all new documents created from... (Usually, you'd see the Normal.dot
template, unless you're using a customized template).
Now, all new documents created from "blank document" will have these font
settings for the Normal style.

Cindy,
That was the ticket.
Thanks so much.
It set to default, and it also set that first box in the styles panel to
that.
Thanks again,
Jeff

For Word 2007 use the following steps to modify defaults:
- On the Page Layout tab in the Themes group open Theme Fonts and at
the bottom select Create new theme fonts
- Set your Heading and Body font accordingly and provide a name
- Verify your new custom font is selected in the Gallery
- On the Home tab in the Styles group click Change Styles and then Set
as Default.
Otherwise, if you use the old methods for setting defaults, such as
using the Font dialog box, you'll be unable to take advantage of the
new features of Word 2007. Most of them are designed to save you time
when it comes to formatting a document. One example is if you insert a
Cover Page, or other Building Block, it will automatically be
formatted with the fonts you specified for Headings and Body font. (It
won't if you use the Font dialog box and the Default button). The
connection the Theme Fonts which are identified in the Font drop
down - you'll see the font name followed by (Headings) or (Body)
accordingly.

I'm not sure what you mean by "it didn't show up in the Styles
gallery". What didn't? Are you saying that after you created new Theme
Fonts you didn't see the font used in the Styles gallery? If that's
the case, did you verify the new Theme Fonts you created is selected
in the Theme Fonts gallery?
