Is there a way to modify the default appearance of the template dialog you
get when you choose FILE then NEW then ON MY COMPUTER?

On my (Word 2003) system, it always displays the available templates using
the big (inefficient) icons for files. I prefer the smaller icons so that I
see the full template name, since I have hundreds of templates, many of
which have rather long names.

While on the subject, is there a way to go directly from FILE, NEW to the
avialable templates without a stop at the keyboard-UNfriendly "New
Documents" sidebar thingamajig? I miss the old behavior.

Short of a macro, there's no way to get Word to change the type of icon used
in the File New dialog, but you can get directly there by adding the
FileNewDialog command to a menu or toolbar. By default, it will display
Other..., but you can replace it with text of your choice and/or the default
New button face.

As Suzanne has indicated you don't have to use the task pane at all. It was
one of the first things I got rid of after installing 2003. The default size
of the icons in the FileNew dialog is fixed, but you could switch it with a
macro eg

Sub FileListView()
SendKeys "{TAB}{TAB}{TAB}{TAB}{TAB}{TAB}{RIGHT}"
Dialogs(wdDialogFileNew).Show
End Sub

If you have 'hundreds' of templates, you would do well to manage them in
folders - see http://www.gmayor.com/Template_Locations.htm

Problem with that is that I know of no way of determining which 'tab' is
currently open and Word whilst open retains the last used 'tab'. Furthermore
users may not have the same number of tabs available and they are likely to
have different names. For the sake of a single mouse click (or CTRL+Tab) to
change the window, it is simply not worth the aggravation or trying to
cobble something together. Just make sure that your most frequently used
templates are in the opening Window - see
http://www.gmayor.com/Template_Locations.htm .

Yep.  I've done it.  I don't like that pesky File > New > blah blah blah
either.
So I made a couple of macros.  One opens my normal template.  The other
opens the template folder.  I edited the buttons to put color-coding around
the outside.  Then added them to the toolbar.  Works great!

No macros needed. If you want a new document based on Normal.dot, you can
use the default New (FileNewDefault) button on the Standard toolbar or the
keyboard shortcut Ctrl+N. If you want direct access to the File New dialog,
add a button for FileNewDialog. Both can be done through Tools | Customize
without recourse to a macro.
