Have you tried:
Open a blank document
Edit>Select All
Tools>Language>Set Language
a. Click UK English
b. Click the button "Default..."
Click "Yes" in the resulting dialog
c. Click "OK"

I should have said I was using office 2007. I have found it there at last.
There is an option to set the language in the para style and that seems to
do the trick. I happen to be using a book on new 2007 Office facilities. (I
have not needed to look at anything like this for the last 4 versions of
office but in this version everything has moved or changed. Otherwise I
don;t think I would have found it
In my experience with Vista and Office 2007 as well as introducing a lot of
vital advances they have gone on to revise everything else so that both are
a large and very irritating learning challenge. I believe it will put many
off and drive them to open systems.
