How do I change the default table grid format to clear format?

Do you mean the grid that is displayed from the drawing toolbar > draw >
grid (or in Word 2007 view > gridlines)?

It is in styles and formatting. I can delete the table grid and use clear
formatting but it only changes for the current document. When word is
restarted it goes back to the default setting of table grid. I would like
the default to be clear formatting. Word 2003

Did you check the box "Save to Template"?
Is it a light-gray grid or darker lines?
