Is the document a .doc or a .docx file? The Document Property feature you're
trying to use works only in Word 2007-format documents, using the new
content control feature.
Old-style document properties (using fields, via Insert - Quick Parts -
Field - DocProperty) Work in Word 2007 and Word 97-2003 documents, but the
content control variety work only in .docx documents.

I thought was referring to adding a DP and not being able to see it under
the DP list under QuickParts which shows Built-In DPs in 2007.
