Can't find feature in Word 2007

Can anyone tell me where to find the following: A gray box that can be
inserted in the document that, after protecting the document, you can enter
info into it and tab to the next one? I can't find it in 2007.

You mean a legacy form field - in the legacy tools on the developer toolbar.
The developer toolbar is not turned on my default - see Word Options >
