Missing Symbols Subset Drop-Down Box

When I try to insert a symbol, the subset drop-down box is not available for
any font.  How can I fix this?

Most likely you have the display set to ASCII instead of Unicode.

How do I change that?

In the bottom right-hand corner of the dialog, change the "from" setting to
"Unicode (hex)."
