One way is to manually bookmark (by using Insert>Bookmark) the *figure
numbers* and, in the Cross-Reference dialog box, insert a
cross-reference to the bookmark instead.
Another approach is to create a new caption label named "Fig" and
use that instead of the default "Figure" one. Note that you would get
the abbrevated version not only in cross-references but also in your
figure captions.

I have accidentally inserted such a new label into the
Reference Type menu, and now I do not know how to remove
it. How can I remove, as opposed to add, entries from the
reference type menu of the Insert/reference/cross
reference?

Use the Caption dialog box (Insert>Reference>Caption in Word
2002/2003, Insert>Caption in Word 97/2000) to add and delete caption
labels. Note that you cannot delete the built-in labels named
"Figure", "Equation", and "Table".
