I guess this is not a numbering question in the literal sense, but this
seemed like the best place to ask.  How can I change the number of
pages in the footer of my document without manually typing it in.  I
like it to be automatically inserted and updated since I frequently
change my document, but it counts the pages in the front matter as
pages which I do not want.

Insert a SECTIONPAGES field in your footer; you can find it if you
choose Insert>Reference>Field, assuming that you are using Word 2002
or Word 2003 (but see also
http://word.mvps.org/FAQs/AppErrors/PageXofY.htm).
